Homemade Gluten Free Bread
3 and a half cups all purpose flour 3 teaspoons quick rise yeast 1 tablespoon xantham gum 1 tablespoon sugar 2 eggs separated Cup and a half warm water 3 tablespoons vegetable oil Let rise for about an hour. Bake at 375 degrees for 45 minutes.
Beginning and Feeding a Gluten-Free Sourdough Starter
This starter is free of gluten, yeast, and dairy. It is a good base for gluten-free sourdough pancakes, breads and muffins. This starter uses Teff Flour but any gluten-free flour could be used. My starters use an unusual ingredient “Water Kefir” to boost the bacterial activity. See my videos on Water Kefir to learn about this potent and tasty ingredient. Gram Flour Bread making
2 X cup measures gram flour 1/2 tea spoons cream of tartar 1/4 tea spoons bicarb of soda 1/2 tea spoons of olive oil 1/2 table spoons lemon juice Preheat oven to maximum mix batter thouroughly with enough water to make a stiff creamy batter lightly grease baking tray and 3 “poachette” rings place poachette rings on baking tray pour batter into the poachette rings to form the muffins when they bake place in the middle of the oven for 15 – 20 minutes Take ut of oven, using oven mits to lift the rings off the baking tray and usng a regular table knife to remove the buns from the rings. leave them for maybe 10 minutes or so to cool down, slice open with a knife, eat with any topping you desire.
